A vegetable-forward kitchen inside an 1888 heritage house in James Bay, with two storeys of rooms that feel more like a friend's home than a restaurant. Hayley Rosenberg built Nourish on a holistic-nutrition philosophy, moved it into this house in 2015, and the next year was the only Victoria spot named to Canada's 100 Best. In 2023 she sold it to chef Maxime Durand and partners, who kept the plants front and centre and brought back dinner. It is for the gluten-free friend everyone tiptoes around, and for anyone who wants to leave a meal feeling lighter, not heavier.
The move
At brunch, the Golden Benny is the one regulars evangelise: two poached eggs over kale, sweet potato and mushrooms under a turmeric cashew hollandaise, gluten-free and easily made vegan with tempeh. Gluten-free folks order the Sleeping Beauty, an oatmeal pancake with blueberries and whipped cream. Come back Wednesday to Saturday for Durand's seasonal dinner.
Go when
Weekday mornings if you want the house calm and the upstairs rooms to yourself. Weekend brunch is the famous one and the wait builds fast, so arrive right at 9 when the doors open, or settle in for the line.
