Logan Gray's family started this on Discovery Street and built it into the roaster a lot of Victoria quietly treats as the local standard: small batches, beans matched to the brew method, four cafes plus a Rock Bay roastery and training lab. The Blanshard Street room is the downtown one, and the appeal is that nobody is performing for you. It is for the person who knows what a cortado should taste like and just wants it made right, with a Yonni's doughnut on the side.
The move
Order a cortado or straight espresso to judge the roast honestly, then take home a bag of the Rock Bay Blend or the Discovery Street Blend. If there is a Yonni's doughnut within reach, that is not optional.
Go when
Morning, when the espresso is dialled in and the doughnuts are freshest. Skip the weekday 8 to 9 rush at the downtown counter unless you have somewhere to stand and wait.
